Zucchini Salsa

By popular request, for those of you who are interested... here is my friend Sara's recipe for zucchini salsa. It is very yummy!!! And mild! I hope someone can enjoy it!! {{I accidentally put twice as much brown sugar as it asks for so mine actually tastes like relish instead. But still yummy.}}

Combine:
10 cups chopped zucchini
3 cups chopped onions
3 1/2 cups chopped green peppers
5 Tbsp salt

*Mix together and set overnight
*In the morning, rinse and drain

Combine:
5 cups chopped tomatoes (blanched, skinned, seeds removed)
2 cups vinegar
1 cup brown sugar
1 tsp garlic powder
1 Tbsp cumin
1 Tbsp corn starch
2 tsp dry mustard
1 tsp nutmeg
1 tsp pepper
1 tsp turmeric

Add first mixture to second mixture. Bring to boil and boil for 30 minutes. Stir often to prevent sticking.

Fill hot jars with salsa and place 2-piece head caps on. Process in a hot water bath for 15 minutes for pints and 30 minutes for quarts.
